Quick muffins for your littles
Sasha LOVES muffins! Her favorite muffins are from our local Farmer’s Market. You know, the giant head sized muffins with enormous blueberries that burst in your mouth as you sink your teeth in them. They also happen to be made with regular flour and sugar. I’ve created a quick muffin for your littles that you can make without the sugar or flour or gluten!
Muffins filled with Nurturing ingredients
I like muffins because with the right ingredients they are a meal, specifically breakfast. Slice a muffin in half and add some sunflower seed butter or almond butter and you have an extra dose of protein and good fats. Having a satiated little toddler is EVERYTHING! For me, having a muffin with a nice hot cup of coffee or peppermint tea is a great way to decompress after running around all day. I love using oats or almond flour for my muffin recipes.

To make these muffins, I had Sasha help me. She is at that age where she can help me grab the ingredients I need. I love teaching her how to measure and mix. She loves to taste the batter! Can’t blame her! She waits anxiously as the muffins smell up the house of cinnamon spice. I can’t wait to watch my daughter eat something so full of ingredients that are pronounceable, healthy and belly-filling!
Banana Oat Muffins
- 2.5 Cups GF Old Fashioned Oatmeal
- 2 Whole Eggs
- 1 Scoop Nutrabio Protein
- 1 cup Siggi’s 0% fat Yogurt (we used Vanilla)
- 1/2 Cup Raw Local Honey
- 2 Bananas
- Cinnamon + Vanilla extract (to your liking) we used a lot!
- 1/2 tsp. baking soda
- 1.5 tsp baking powder
- Preheat oven to 400. Spray muffin tin or line with parchment paper muffin liners.
- Place all ingredients in your Vitamix or blender.
- Pour batter into each muffin liner.
- Cook 15-20 minutes.
