Remember those chicken nuggets I made for Sasha + heather that ended up becoming a staple in our house each week? Well, I did it again! I created a simple recipe for getting Sasha to eat her fish. While she loves her wild salmon, sometimes she isn’t in the mood. This mama isn’t always in the mood to beg her to eat. Instead of begging her, chasing her or making deals with a two-year-old to eat her fish, I figured I’d continue to create recipes and whatever sticks, sticks!
I always make Sasha’s food before anyone else including myself. So, once her food is done, especially if it’s a finger food like these fishy sticks, she can continue to play or read while she eats her food. This is yet another way to get her to eat without forcing her to sit at the table when she doesn’t want to. For the most part, we eat at the table as a family every single night. Sasha sits in her highchair, and we sit next to her. After about a hot minute, she claims she is all done and wants to sit on mama’s lap. This is when I start to lose all patience and Mario get aggravated.
Again, I want her to be happy, I want her to eat all her food, and I want me and Mario to sit and calmly eat our dinner together without losing our cool. I see nothing wrong with Sasha enjoying her books while enjoying her dinner at her own little table or on the ottoman. She pretty much finishes her dinner before I even finish cooking ours. Every family has their own ways to get through the mealtimes without killing each other and this is our way. It works.
I used to buy her the Dr. Praegar’s Fish Sticks until she stopped eating them and I really looked at the ingredients!
Here are the ingredients they use:
MINCED ALASKAN POLLOCK (WILD), BREADING (UNBLEACHED WHEAT FLOUR, CORN STARCH, YELLOW CORN FLOUR, SALT, SUGAR, YEAST, GARLIC POWDER, ONION POWDER, SPICES, DEXTROSE), EXPELLER PRESSED CANOLA OIL, POTATOES, ARROWROOT POWDER, SEA SALT, GARLIC, BLACK PEPPER
CONTAINS: WHEAT, FISH (POLLOCK)
I am not crazy about a lot of the ingredients! Corn Starch, yellow corn flour, sugar, canola oil, potatoes, wheat. NONE of which we ever use or wish to use in our diets.
I asked Mario to pick up Lemon Sole or Sole or Cod when he went to pick up our wild salmon one night. He brought home a beautiful white piece of fresh cod, about 6 oz. That’s a nice size for someone like me. Cod is light, thin, clean and tastes great.
Here is what you need:
- 6-8 oz white flaky fish- We prefer cod or sole
- Gluten-free, Corn-free, wheat free breadcrumbs
- 2 whole eggs
- 1/4 cup canned sweet potato puree
- salt + pepper + paprika + Mrs.Dash all purpose seasonings
- 3 tbsp. flaxseed
- 3 tbsp. grapeseed oil
- cut your fish into little cubes
- in a bowl, mix your egg + canned sweet potato + paprika + salt + pepper
- On a large plate, add your breadcrumbs, flaxseeds + Mrs. Dash.
- place the cubed pieces of fish into the egg mixture and coat well. meanwhile, heat 3 tbsp. grapeseed oil in a large frying pan over medium heat
- Dip into the breadcrumbs. Place in the heated frying pan and cover.
- I cooked each side until they were golden brown.
I give these to Sasha with diced avocado on the side and some sliced and cubed apples or asparagus (last time) or something else she likes.
What I love most about these fishy sticks is that they are so filling so crunchy and easy to eat! Oh! and let me add that Sasha will have like 4-5 pieces leftover out of about 15 little fishy sticks. She will eat them cold the next day.
