I love having a big salad with Tuna! For me and my family, there is only one brand of canned tuna I will buy. That is Pole Caught American Tuna. I have blogged about this brand several times, for example, Fit Green Goddess Tuna Salad and tuna.
I love that this brand offers a no salt / in water or a salted / in olive oil. Either one is great, but if you are watching your calories or sodium, I suggest the water / no sodium. It’s hearty and very tasty. No fishy at all.
Here is a quick easy recipe you can make and make in a mason jar or a container and bring to work. It took me about ten minutes to chop everything. Easy breezy for you mom’s who want to eat healthily, make something quick and bring to work. It’s also very satiating!
I can’t get Sasha to eat it, but Mario loves it. I can eat Tuna every day, and even though this brand is safe, I just don’t.
- 1 can Pole caught Tuna (American Tuna)
- 1/2 container Boston Bibb Lettuce- chopped
- 1/2 large English Cucumber- diced small
- 5 stalks celery- diced small
- 1/2 Honey Crisp Apple- sliced and diced
- 1 carrot- sliced and diced small
- 1/2 lemon- Juice off
- 1 tsp. olive oil
Grab a big bowl and toss in all of your veggies. Mix well. Drain your tuna, and then with the top on, press out any extra liquid. Rinse under cool water, strain again. With a fork, kind of break it up and add to the bowl. Add the olive oil and lemon juice. Mix well and serve.
